CAP BOURBON
The value of the collective, where every role complements the others and all team members share the same high standards, values, and passion for the sea.
A company on a human scale, CAP BOURBON currently employs 38 people—comprising 29 crew members and 9 support staff—who work together to ensure product quality, operational safety, and the rigorous standards essential for fishing Patagonian toothfish and spiny lobster in the Southern Ocean.
Together, they form a close-knit team: men and women passionate about the sea, committed to sustainable fishing, and proud to carry on a unique expertise.
Every profession plays an essential role.
Aboard the Cap Kersaint, our crews brave extreme conditions, ensure responsible fishing practices, and strictly adhere to TAAF and CCAMLR regulations.
On shore, our teams coordinate operations, handle administrative requirements, plan fishing campaigns, monitor traceability, and ensure that every fishing trip is carried out under optimal conditions.
On land and at sea, the men and women of CAP BOURBON organize themselves around various roles to meet the demands of the fishing value chain.

Aboard the Cap Kersaint: expertise, courage, and a passion for the sea.
The sailors of CAP BOURBON operate in one of the most isolated environments in the world: the waters of Kerguelen, Crozet, and Saint-Paul & Amsterdam.
They live together for three months and, since 2026, have carried out two distinct fishing operations during this period—one for Patagonian toothfish and the other for spiny lobster.
Their daily routine rests on three pillars:
Technical expertise: use of deep-sea longlines for selective Patagonian toothfish fishing; setting and hauling traps for spiny lobster.
Rigour and safety: managing operations by day and night, adhering to strict procedures, and collaborating with the fisheries observer.
Crew life: solidarity, mutual support, and a team spirit to face long voyages and harsh weather conditions.
On board, every action counts: from preparing the lines to sorting the fish, including handling equipment or everyday tasks.
Expertise in every movement and strong team cohesion ensure the success of every fishing trip.

On the ground: the organization that makes the difference
While fishing takes place at sea, success is built on land.
CAP BOURBON’s administrative, technical, and logistics teams prepare, oversee, and ensure the safety of all operations.
Their responsibilities include, in particular:
Campaign preparation: planning, documentation, regulatory standards, coordination with the TAAF, and supply management.
Vessel reception: organizing port calls, inspections, and port and health formalities.
Traceability and quality: monitoring fishing data, regulatory reporting, and liaising with scientific and administrative authorities.
Logistics coordination: unloading, sorting, processing, and packaging products with our industrial partner.
On shore, every role helps streamline the supply chain, ensure compliance, and maximize the value of products destined for both local and export markets.
